Ingredients
Protein + Warm Base
- 1 (15 oz) can chickpeas, drained and rinsed
- 4 large eggs
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon kosher salt, plus more to taste
- Black pepper
Bulk + Crunch
- 2 romaine hearts, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, sliced thin
- 1/4 red onion, very thinly sliced
- 1/3 cup pepitas, toasted
Lemon Dill Yogurt Dressing
- 3/4 cup Greek yogurt
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon chopped dill (or mixed soft herbs)
- 1 teaspoon Dijon mustard
- 1 small garlic clove, grated
- 1/2 teaspoon salt
- 2 to 3 tablespoons cold water to loosen
Method
- Cook the eggs: Bring a small pot of water to a boil. Lower in eggs and cook 7 minutes for jammy centers. Transfer to ice water, cool, peel, and halve.
- Crisp the chickpeas: Pat chickpeas dry. Heat olive oil in a skillet over medium-high heat. Add chickpeas, smoked paprika, cumin, garlic powder, salt, and pepper. Cook 8 to 10 minutes, shaking the pan occasionally, until lightly crisp and hot.
- Make the dressing: Whisk yogurt, olive oil, lemon juice, zest, dill, Dijon, garlic, and salt. Add water a little at a time until pourable but still creamy.
- Build the bowls: Divide romaine, tomatoes, cucumber, and red onion between two big bowls. Top with warm chickpeas and egg halves.
- Finish: Spoon over generous dressing and shower with toasted pepitas. Crack black pepper on top and eat right away.
Make It Sexier
- Add a few anchovy fillets to the dressing for extra savory depth.
- Hit the warm chickpeas with a squeeze of lemon right before they leave the pan.
- Finish with flaky salt and extra dill so it looks as good as it tastes.
Swaps & Shortcuts
- No dill: use parsley, chives, or dried dill in a pinch.
- No pepitas: use chopped almonds, sunflower seeds, or crushed croutons.
- Short on time: use pre-boiled eggs and skip straight to crisping chickpeas.
- Dairy free: swap Greek yogurt for a thick unsweetened plant yogurt.
Meal Prep & Storage
- Keep dressing in a sealed jar up to 4 days.
- Cooked chickpeas keep 3 days in the fridge. Reheat in a dry pan for best texture.
- Store chopped veg separately from dressing for max crunch.
- Eggs can be boiled up to 3 days ahead and peeled when ready to serve.
