Quick Stats

  • Time to make: 35 minutes
  • Servings: 2 meal-sized bowls
  • Difficulty: Easy
  • Protein: 32g per serving

Why This Works

  • High protein: eggs + chickpeas + Greek yogurt bring serious staying power.
  • Bulk: romaine, cucumber, and tomatoes keep the bowl big and fresh.
  • Fat and dressing: olive oil plus tangy yogurt dressing make it satisfying.
  • Crunch: pepitas and crisp lettuce give real texture, not just garnish.
  • Warm + cold contrast: hot chickpeas on cool salad makes every bite interesting.

Ingredients

Protein + Warm Base

  • 1 (15 oz) can chickpeas, drained and rinsed
  • 4 large eggs
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt, plus more to taste
  • Black pepper

Bulk + Crunch

  • 2 romaine hearts, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced thin
  • 1/4 red onion, very thinly sliced
  • 1/3 cup pepitas, toasted

Lemon Dill Yogurt Dressing

  • 3/4 cup Greek yogurt
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon chopped dill (or mixed soft herbs)
  • 1 teaspoon Dijon mustard
  • 1 small garlic clove, grated
  • 1/2 teaspoon salt
  • 2 to 3 tablespoons cold water to loosen

Method

  1. Cook the eggs: Bring a small pot of water to a boil. Lower in eggs and cook 7 minutes for jammy centers. Transfer to ice water, cool, peel, and halve.
  2. Crisp the chickpeas: Pat chickpeas dry. Heat olive oil in a skillet over medium-high heat. Add chickpeas, smoked paprika, cumin, garlic powder, salt, and pepper. Cook 8 to 10 minutes, shaking the pan occasionally, until lightly crisp and hot.
  3. Make the dressing: Whisk yogurt, olive oil, lemon juice, zest, dill, Dijon, garlic, and salt. Add water a little at a time until pourable but still creamy.
  4. Build the bowls: Divide romaine, tomatoes, cucumber, and red onion between two big bowls. Top with warm chickpeas and egg halves.
  5. Finish: Spoon over generous dressing and shower with toasted pepitas. Crack black pepper on top and eat right away.

Make It Sexier

  • Add a few anchovy fillets to the dressing for extra savory depth.
  • Hit the warm chickpeas with a squeeze of lemon right before they leave the pan.
  • Finish with flaky salt and extra dill so it looks as good as it tastes.

Swaps & Shortcuts

  • No dill: use parsley, chives, or dried dill in a pinch.
  • No pepitas: use chopped almonds, sunflower seeds, or crushed croutons.
  • Short on time: use pre-boiled eggs and skip straight to crisping chickpeas.
  • Dairy free: swap Greek yogurt for a thick unsweetened plant yogurt.

Meal Prep & Storage

  • Keep dressing in a sealed jar up to 4 days.
  • Cooked chickpeas keep 3 days in the fridge. Reheat in a dry pan for best texture.
  • Store chopped veg separately from dressing for max crunch.
  • Eggs can be boiled up to 3 days ahead and peeled when ready to serve.
