Ingredients

Buffalo Chicken

  • 12 oz chicken breast, bite-size pieces
  • 1 tsp olive oil
  • 1/2 tsp salt
  • 3 tbsp buffalo sauce

Salad Base

  • 5 cups chopped romaine
  • 2 hard-boiled eggs, halved
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/2 cup celery, sliced thin
  • 1/4 cup red onion, thinly sliced

Yogurt Blue Cheese Dressing

  • 1/2 cup Greek yogurt
  • 2 tbsp crumbled blue cheese
  • 1 tbsp lemon juice
  • 1 tbsp water
  • Pinch black pepper

Method

  1. Cook chicken in oil with salt until done, then toss with buffalo sauce.

  3. Lay romaine in bowls and arrange eggs, tomatoes, avocado, celery, onion, and buffalo chicken in rows.
